I brewed Northern No. 1 back in early January, and planning on bottling it this week. I vaguely recall NB recommending you buy three packs of the wyeast old ale blend 9097, 2 for primary and one for bottling but only bought the first 2. I washed the yeast when secondaried 5 months ago and planned to use it for bottling yeast, but now second guessing if I shouldn't just use some new dry yeast instead. I've had it on a stir plate for the past two days to get the yeast going again, so I know it's viable. Any reason I should use new dry yeast over it if I'm not worried about it being contaminated?
Planning on letting it sit and age for a few years as well, so this will be my first attempt with gold caps.
