Hey everyone,
I'm from the craft beer crazy city of Asheville, North Carolina where it's hard to not get into brewing your own after going to all the micro breweries around town. I have brewed my 1st two beers the last two weekends and came across this forum just looking for info/recipes around the net.
I brewed a Mock recipe of a local great Highlands Cold Mountain and an American Blond. Fermentation seems to be going well, the Cold mountain I brewed on 1/24/15 and is bubbling every 12 secs(as of 2/2/15), and the American Blonde I brewed 1/31/15 is bubbling every nonstop about every second (as of 2/2/15). So hopefully it turns out alright. any tips or info I should start to look for on when I should look to Bottle? I know about 10-14 days is a kind of minimum but don't I just wait till there are no bubbles in the airlock?

Welcome I am also very new here but have already received a lot of help and encouragement from these guys. Be careful it is addictive.

Welcome to the group and obsession from CT!

Sounds like your first two brews are off and running and like the post above says please be carful this hobby will take over!

Thanks for the warm welcome! I'm excited to make all kinds of different brews from stouts to meads.
That being said here is a Pic of my first brew a week into fermentation. Anything I should make note of that anyone can tell from the picture?

Welcome to brewing in Asheville! Great place to live, play, and drink! I live near Mission Hospital; I'll let you know next time I brew if you wanna swing by and do an all grain brew and chat beer!

Sorry it's taken me so many months to get back on here. Update though, the Cold Mountain Clone I made had more of a vanilla porter taste, than the cinnamon flavor. American blonde turned out great. especially for being a 2nd brew. Pedimac that would be awesome, I'm not to all grain brewing yet but would love to sit and watch how its done a few times first.
