Im making a woodfordes 24 pint headcraker kit, I've been told if I leave the yeast out & add light malt extract I can make it upto 40 pints, would this be ok???
 
Going on the assumption that you are new to this, I would stick with the kit as purchased. In order to preserve the character of the beer you would need to increase not only the extract, but any specialty grains and hops. If you leave the yeast out, it will not ferment and you will not have beer.
