Belgian Tripel, so I wanted it to have either a French or Dutch name. I don't know French, but know enough Dutch to translate "Dutch Apocalypse." After working some muscles and struggling to add heat to mash, I decided that next time I do a high-gravity mash, to do a decoction.
1/2 # Honey malt
1/2 # Victory malt
1/2 # CaraPils
1/2 # Crystal 10L
1 # flaked oats
4 # oat malt
4 # 6-row malt
4 # pale wheat malt
4 # Canada pale ale malt
1 oz Cluster (6.8AA, 60min)
1 oz US Fuggle (5.7AA, 60 min)
2 oz Czech Saaz (3.2AA, 12 min)
SafAle S04 dried yeast -- OG 1.082 -- 13 SRM -- 43 IBU
I expect it to be around 8% ABV.
