I left out my gravity sample overnight in the kitchen and it started to ferment, I'm going to wait for it to finish and maybe brew something with it.

I didn't pitch any cultured yeast...this is native airborne yeast. They won't act the same way or finish with the same gravity.
 
I've had gravity samples I forgot about for over a week and never fermented. Tasted as sweet as it did when it was brewed. Yet, I had an infected batch one time. Think any flower from the barley flying around will inoculate wort with lacto
