Keep it basic:

10 lbs Pale Malt
2 lbs Caramel / Crystal Malt - 60L
2 lbs Chocolate Malt
1 lbs Oats , Flaked
1 lbs Milk Sugar (10 Min)
2 oz Wilammette - Boil 60.0 min - 30.6 IBUs

Mash at 156, pitch a quality amount of yeast - 05 in this case.

It's a lighter, smooth, slightly sweet stout. The ones that took 3rd this year were brewed about 19 months ago. I've done batches with various hops - I've moved to just using .75 oz Warrior. By the time the beer is awesome it's not important what the floral character of the hops were.

Basically it's just proving that basic recipes and careful attention to brewing technique can be really great. I often think that homebrews are over-thought. I'm trying to simplify all my recipes and my beer is getting better.
