I've been brewing for a few years, growing hops and even some Zinfandel grapes (in SC)..

I'm wanting to add my Zinfandel grapes (must) to a beer,
my question.. should I treat the must like fruit in the fermenter or add it sometime during the "cooking" process ; if so WHEN?

I've looked at Allagash Victor, they add to the mash but found the grape taste was greater in DFH 61; and cant find how they treated the must.

I have no experience in using grape must. But I love experimenting, so if you ask me, I would try adding the most close to the end of the boil. Just like you treat the aroma hops.
