First off with this being my first post here I would like to thank all of you for all the advice, previous and future.

1. Pid from Auber SYL-2352
2. RTD sensor 1.5" and 4" and cable
3. Heat sink (lil to big but it fits)
4. SSR 40A
5. Camco 240v 5500watt element
6. Project box from Amazon
7. Some weldless fitting from bargain fittings.com

So hopefully this weekend will be a constructive one (see how Sat night Oktoberfest goes). I will be using a keg for my kettle and since I don't have easy access to 240v outlet, I will be hooking into 120v for now. I did order everything to handle the 240v if I move/get electrician friend to wire up an outlet for me.
Now for your input please. Anything that I may want to do or add to this. I really appreciate all that everyone here does so thanks again and I will keep everyone posted as I move forward!!!!
