I'm planning on doing my first all Brett IPA for my next batch. I've got some Apollo and Mosaic in the freezer and also wanted to give Zythos a try. I'm curious if this hop bill will go well with the mango and pineapple flavors I've read that Brettanomyces bruxellensis Trois gives as the primary yeast. This will also be the first time doing a hopstand. Any other issues with the recipe? Thanks!
