We're wanting to brew a Bavarian Hefe that leans on the banana side, similiar to Yazoo's hefe I suppose. We were told to use a genuine hefe yeast strain, but the guy at the brewshop suggested we try Danstar Munich for it. Will this give us the flavors we desire, or should we stay with a hefe yeast?

danstar munich is a hefe yeast. i get strong banana by pitching 3/4 of the packet of munich yeast for 5gallons of beer. i fermented at 69F. i guess overpitching can prevent banana esters, wyeast also mentions that on their hefe yeast web pages.
