They help prevent a stuck sparge - they just provide bulk to keep junk in the mash from clogging. Your recipe probably calls for adjuncts that don't have their own hulls, this just keeps it from forming a sludge that the wort gets stuck behind.

Awesome, I figured it had to be something like that since they are not going to add any fermentable sugars to the wort
