Hey, everyone...
This is a question about maví or mauby, a fermented brew from the Caribbean.
One of my co-workers is a native Puerto Rican, and was wondering if he could find a source for a maví starter culture here in the US. Traditionally this low-alcohol soda-like brew is inoculated with the dregs of the previous batch.
Does anyone here know where such can be obtained, or what yeast strains would make an acceptable substitute?
