I'm about to place the dreaded Wyeast order for my store, and would like input on what to keep in stock. I'm a White Labs girl myself, so I'm not sure what Wyeast would sell and what wouldn't.

What are your top 20 Wyeast picks?

Solid list. I don't brew lagers but I think the three most important yeasts are:

Neutral American ale yeast: 1056 plus maybe a few others if you feel like it

Low attenuation English yeast: 1968

Belgian yeast: They are all good, personally I like 3711 and 3787

With those three yeasts you could brew practically any type of ale. Actually, with just 1968 and 3711 I do every kind except sours. If you have to pick one brett, go with brett brux.

The only Wyeast product I really use is 1469 west yorkshire. But it is the only English yeast I use anymore. It puts out some amazing esters. Even an unhopped starter tastes good.

Good start.

add

1214 another good Belgian
1272 Nice yeast for IPA. A little fruitier than 1056 but drops out clear
1968 Nice
3944 Good Belgian witbier yeast
1007 nice clean German ale yeast
2565 Kolsch

I do not brew lagers so I am not familiar with those yeasts.

1469 West Yorkshire! If I could only have one English strain, it'd be this one. Terrific ester profile & decent floc.

1728 (sexy in so many styles), 1056 (clean) , 1007 (crispy) , 3711 (fantastic for dry summer beers) are my 4 go-to strains (in that order). I'm developing a fondness for 2112 for lagers, 1332 (it's a love it or hate it strain), and 1968 for english ales.

Here's what I'd do with my 20 strains. Bold are must haves.

1007 German Ale
1084 Irish Ale
1056 American Ale
1272 American Ale II

1469 West Yorkshire
1968 London ESB Ale
1728 Scottish Ale
3068 Weihenstephan Weizen
3056 Bavarian Wheat
1214 Belgian Abbey

FYI, mrmalty.com has yeast comparison charts that show The yeasts and Breweries that use them? maybe. And charts that list White Labs and the comparable Wyeast equivalent and another that has them switched.

So, if you know what sells best for White Labs you could start with the same in Wyeast.

I brew mostly English Ales, so my list would be:
1028 London Ale
1084 Irish Ale
1099 Whitbread Ale
1275 Thames Valley Ale
1318 London Ale III
1968 London ESB Ale

Surprised no one mentioned 3522 Ardennes. Very popular Belgian strain. (Sorry 2 weeks late...)
