Hey everyone,

Just hashing out a simple pale ale recipe based on what I have on hand for the weekend. I'm wondering if the Magnum plays well with Willamette. Also, I'm shooting for a balanced Pale Ale that's not too bitter and is easy drinking. I have some Cascade and Perle too, but the pale ale I just made uses those, so I wanted to do something different with the hops.

Ale Pale Pale Ale

11.5 gallons

85% efficiency

Grain

17 lbs 2 row

1 lb crystal 60

Hops

Magnum .9 oz (16%AA) 60 min.

Willamette 1 oz (5.2%AA) 20 minutes

Willamette 1.25 oz 10 minutes

Willamette 2 oz O minutes

Yeast WLP 051 California V

SI mash @ 152

I'm using a CF chiller FWIW regarding the hop additions.

I'm using Homebrew Formulator for mac and am coming up with 1.048, SRM 7.9, and 37.1 IBU.

Suggestions?

I think it's sounding good but I've never used Willamette.

I love magnum for bittering, so that's great.

I'm not a huge willamette fan by itself, but some people love it. It's a little "earthy" for me. I love it combined with a little cascades, though, in late additions. I did a Bell's Amber type clone, and used this schedule (five gallons!):

1.50 oz Williamette [4.80 %] (60 min) (First Wort Hop) Hops 26.8 IBU
1.00 oz Williamette [4.80 %] (10 min) Hops 5.9 IBU
0.50 oz Cascade [5.40 %] (5 min) Hops 1.8 IBU
0.50 oz Cascade [5.40 %] (1 min) Hops 0.4 IBU

I'd even use mostly willamette, with just .5 ounce of cascade spread in two additions, an ounce total in the 11.5 gallon batch. I just like the way the cascades combines with the earthy warm willamettes.

I changed the hop schedule based on Yooper's advice and the fact that I'm not quite sure what to expect with the Willamette. It's a lot more complicated now too!

.9 Magnum 16% AA--60 minutes

.75 oz Willamette 5.2% AA--20 minutes

.5 oz Willamette 5.2% AA---10 minutes

.25 oz Cascade 7.9% AA----10 minutes

.5 oz Willamette 5.2% AA---5 minutes

.5 oz Cascade 7.9 AA--------5 minutes

.75 oz Willamette 5.2% AA-0 minutes

,75 oz Casacade 7.9% AA--0 minutes

IBU-aprrox. 36.7
