Macadamia Nut Blossom Honey

I just got a bit over 4lbs of this as a gift from Hawaii and was wondering if anyone else had used it before?

I plan on doing 1 gal of show mead, I have not decided what yeast I want to use yet,

I've never tried it but it sound like it might make something very interesting. I've know people to use Chestnut blossom honey with great results. Please post up a recipe/log so we can see how it turns out for you.
