Looking for Avec Les Bons Voeux Clone (Dupont)

I'd love to brew up a saison/farmhouse similar to this stellar beer. I tend to like this one much better than traditional saisons, partially because I think the sweetness balances out some of the spiciness, and I appreciate the strength.

Has anyone seen such a thing, or does anyone feel like they could take a stab?

I wonder if it would make sense to start with a Saison Dupont clone and bump up the malt bill.

I think it has some specialty malts in the lighter range that regular saison dupont doesn't have. It also has a bit of sourness that either comes from fermentation or a lactic acid addition.
