i'm wanting to do a banana wheat. with ibu's in the 15 - 18 range. 2.5 gallon batch. this is what i came up with. can you tell me what you veterans think.

DME
2.5 lbs Wheat
.50 lbs light

grains
.50 lb honey malt
.50 lb 2 row (i understand i need this to mash the honey malt properly)
.25 lb carapils

4 oz dehydrated banana chips added to mash

Hops
.40 oz tettnang for 45 min
.20 oz kent goldings for 15 min

yeast
WLP300 HEFEWEIZE YEAST (for the banana esters)
or Safebrew WB-06 (Wheat beer yeast) what ya'll think?

3.5 lbs ripe, ripe bananas cut with peelings in secondary for 2 weeks.
