I've made a couple mediocre DIPAs and need help. The recipe below represents the hops I have on hand, some studying of various attempts at Lagunitas' Sucks for the grain bill, and the logic of the Pliny clone for the hops schedule.

Thanks!

I haven't looked at a report because a few friends use the same water with great success. Its an old house though. I just added a carbon filter. I've also been experimenting with gypsum and lactic acid.

It looks like you are using dry yeast. For a gravity that high I would recommend pitching two packs.

Experimenting with gypsum and lactic acid without knowing your water profile is shooting in the dark. Most municipal supplies will give you a free report but I think the analysis from Ward Labs is well worth the money. For example, maybe your water could use some more calcium but is already high in sulfite. Adding gypsum (calcium sulfite) would be a bad idea, and calcium chloride would be a better choice. The point is, without knowing your profile you have just as much chance of making it worse with any additions.

Okay. Cool. Thx for the tips on water. I've made some awesome pale ales and ipas with the bits of adds on gypsum and lactic.

I really am looking for help with grains and hops. Thx

I agree with the others that late hop additions are going to be important to get the most bang out of those pellets. I had really hard water at my previous house, and didn't really know what I was dealing with in terms of water. When I finally started using distilled and adding salts to manually create my profile I noticed a huge difference for the better.

Let us know how it turns out, it looks tasty!
