Lager Method

I learned about the lager method on this page:

I haven't done this method or any lagering before to know the answer to this but how do I know when "Once you know you have a diacetyl free beer" is? Should I be sampling it during fermentation or is there some other method?...

Taste it after the D-rest is complete. If no diacetyl, crash and lager.

I wait until the krausen starts to fall then increase the temps for a few days. Then when I take a reading and if it's at the FG I was expecting I take sip and see if I can taste diacetyl, if not I start to decrease my temps to lagering temperature. Then I let it sit at near freezing for about 2 weeks or until I need a keg to tap.
