Lactobacillus Plantarum and side hops

I have read a bit about Plantarum and realised it hates hops. I would like to use it for a lichtenhainer and would like a little hops. The plan was to first sour and then do a normal fermentation but not kill the lacto. Since I would like a little hops I was thinking, couldn't I do a "side brew" of a few litres at say 40 IBUs and then blend them to end result of 5-10 IBUS?

My next brew is also one of these beers. Zero hops this time, I try to let the saison yeast determine the maximum pH drop by eating all the sugars and carbs before the bacterias party too hard.
