So I know that one of the main bacteria used in a soda made using Ginger Bug is Lactobacillus so I was wondering if adding something like White Labs 672 Lactobacillus Brevis to my fermentation would work to impart some interesting flavor to any soda that I make using this method. What do you think?

I don't make soda but Ive been messing with lacto a lot lately and it sounds like a fine line. Ive made batches that had a lemon-like acidity I can see going well in sodas. However some of the other notes lacto can throw off wouldn't do well. Maybe start by experimenting with some 88% lactic acid first. Then if your on to something you go can full hog using bugs. This way your not infecting your system until you know its worth it or risking a whole batch on an experiment.
