I made a batch of JAOM. Been bottled for about a month. Being an impatient man I had to try a bottle. Not bad, but man can I taste the yeast. Will this mellow with more time? A bit hot too.

I waited for the mead to clear before bottling, so I know it was done fermenting.

Any thoughts would be great.
 
Did you use bread yeast?

Also did the original recipe have the full 3.5lb of honey?

I only ask because so many don't do those things and complain on taste. As long as the JAOM finished sweet just try some every 30 days or so past the 90 day mark and it will be better every month. I really started liking my last JAOM batch at about month 7.
