I have a american Jalapeno boysenberry wheat fermenting now. I'm shooting for a beer with a bit of kick, but something drinkable......I was planning on chopping 5 meduim jalapenos w/ seeds & membrane in secondary of each 5 gal fermentors.

Do i have to worry about wild yeast?
should i soak them in vodka, or something else?
Campden tabs?

Any suggestions are greatly appreciated.

I recently made a jalapeno blonde ale, and used 14 roasted/seeded jalapenos at different stages in the brewing process. I used 5 jalapenos in the mash (provided a lot of aroma); 7 in the boil @ 15 mins (added a small portion of the seeds at this point as well, provided heat); and 2 in the keg. There was certainly a nice layering of heat/flavor after each addition; but nothing overwhelming by any means in the final product. I doubt you are wanting the roasted flavor paired with the boysenberry, so maybe use a very light heat to sweat the peppers down a bit beforehand. My only thought using them raw would be a vegetal taste that might be left behind. Good luck with it! :mug:
 
So.....am i safe adding the peps after primary?
Seems common wisdom says once alcohol is present infection from the peps is not a problem?????
Also 5 jalapeno's to secondary.....wil that be firey hot? or, bearable?
 
You should be fine; maybe use 3-4 and give it a week, as if you were dry hopping. If it's not where you want it, then add a couple more. Can always add more, but can't take the heat out if it becomes too much.
 
I made a chile beer with hatch chiles, which are mild, but I heated them in a little water to reach pasteurization temperatures then I tossed in the chiles and water.

The heat/flavor contribution will change over the course of a few days. At first the flavor will probably be too vegetal but after 3-4 days the vegetable flavor and aroma goes away. The heat will increase each day you leave them in there. You might want to try adding just a few at a time for about a week and see if it's what you like. Repeat if necessary.
