Hi everyone, I recently made a hard cider and racked into secondary. I realized that I had a significant amount of headspace so to reduce the chance of oxidation I added a mixture of pineapple concentrate and water to fill the space. Soon after I got some minor fermentation activity with a good amount of white foam and something which I cant identify its khaki to light brown either krausen or mold/bacteria infection. Can anyone identify whats going on ?

Just yeast that got pushed up as fermentation started again from the sugars in your concentrate. Looks perfectly normal. You’re good.

Krausen. You're good.
I might suggest that next time, leave a little more headroom in the carboy - You're going to end up with overflow coming through the airlock.
