IPA/DIPA Recipe for Summit, Columbus and Willamette

Hi All,

I got a good deal and bought 1lb each of Summit, Columbus and Willamette.
Unfortunately I don’t get to brew a lot at the moment, anyone know of a good IPA/DIPA recipe where I can use these hops up?

Primarily I want to use these three but I can support them with an ounce or two of Citra, Cascade, Amarillo, Falconer’s Flight, Mosaic, Chinook, East Kent Goldings, Nugget, Magnum, NB, Target, Aurora or Galaxy.

Even a recipe that uses a lot of one or two from Summit, Columbus and Willamette as I’m not sure if these three all go well together.

I only have about 0.75oz of centennial so if the recipe includes more of this then I would have to sub with Falconer’s Flight.

Denny Conn's Wry Smile calls out CTZ for bittering. Enohcs American IPA uses Chinook for bittering and Cascade and Willamette for flavor and aroma. Brrman's Heavenly Scourge Black DIPA uses Warrior for bittering, but I see no reason that you couldn't substitute CTZ or Summit. Biermuncher's Tits-Up DIPA calls out CTZ for bittering and Summit for dry-hopping. All of these are popular and have received positive reviews. Several of them have won awards. There are many others that you can browse in the IPA section of Recipes.

I think the IIPA from Green Flash uses a lot of Summit too.

Columbus is one of my favorites. What's the rush in using them up? Buy/borrow a sealer, seal them up in use increments (I usually do 4 or 8 ounces) and put them in the freezer.

Having said that, here are some recipes:

John Palmer's Tittabawasee Brown Ale http://beersmithrecipes.com/viewrecipe/253350/tittabawasee-brown-ale uses a decent amount of Willamette, about 2 ounces per 5 gallons.


If you want to go CRAZY on the Columbus, there's always BrewPasters IPA: https://www.homebrewtalk.com/f69/preaching-hell-imperial-ipa-26721/. This will use just about the whole pound of Columbus for a 10 gallon batch!

ETA: You may note that my signature indicates a Columbus IPA. I'm still developing the recipe on this one, so who knows how it will turn out. Also, I've made variants of Sierra Nevada Celebration and LakeFront IPA using Columbus in place of Centennial in a couple of spots...both came out excellent.

Sorry about the later reply; busy renovating the house at the moment so not much time for brew related stuff.
Thanks for the links, some of those are ones that I actually wanted to try out.

I know I shouldn't be in a hurry to use up the hops but I went a bit crazy a few times over the last few months on the internet and bought a pile of hops.
I have about 15 pounds of hops now and if I just brew "normal" beer it will take me at least 3 years years to use them up :)
I was just looking for some recipes for the less popular hops that I have more than 1/2# of.
I'll have no probelm using up the Cascade, Armarillo, Citra, East Kent. ;)

One hop that appears in loads of good recipes but I have hardly any of is Centennial. However as i have so much other hops I really don't want to buy more so I will try, as you suggested, subbing it with Columbus.
The samr goes for Simcoe, I don't have any of this so am thinking of doing some beers and subbing it directly with Summit.

BTW how did the all Columbus IPA turn out?
 
The Columbus IPA is still in a primary, but I will be racking to keg in a day or so. If you don't have centennial, but do have Cascade and Columbus you can come close by combining them. If I remember correctly, a 70% cascade 30% Columbus ratio.

1 6 lb of golden LME ( I will change now to all grain and will post a recipe when done)

6 lbs of 2 row mashed at low temp.

us 05 yeast


important stuff

hops in ounces

60 min 0.65 summit .35 columbus
30 min 1 cascade .75 columbus
0 min 1.25 cascade
dry hop at 2 weeks for 1 week 2 cascade 1 columbus 1 summit

Yes I heard that before with the cascade/columbus combination as a sub for centennial. This also works well if the recipe already asks for these?

I do have about 5oz of Falconer's Flight, I heard that works as a good sub for centennial too.

Anyway I also like the idea of brewing an nice American stout to use a few ounces of Willammette.
So many options :D
