I dug my first Sassafras roots for the year last week. I am really enjoying the tea I am making. I have been thinking of making some soda with it. What type of yeast would give a good flavor?
 
I am not sure about the yeast, but I tossed some sassafras root in the final boil of a beer I made many years ago and and it was STRONG. Beer has been long since been drank, but I was surprised how much flavor a handful of sass root added to a 6 gal batch of beer.

Never done it since.
 
Nice man, I wouldn't use a Belgian yeast because that's going to be spicy enough on its own I am sure. I guess keep it simple if you want to really bring out the sassafras flavor.
