Howdoo from Westbank BC

Hi, not new to brewing but new to all grain brewing, I like apple ciders and lots of beers, dark ales mostly. Have been looking for info and any experienced modifications to Brandon O's Graf recipe.
I would like to try this without making a total apple cider out of it, I want a somewhat semi sweet malty ale-apple finish to it but no candy apples, and no IPA turn outs unless crisp.
