How would you build your recipe

OK, I am taking part in a "pro am" with my local homebrew club. A local brewery is mashing and lautering wort for us to collect 100% 2 row, we are to chose a style to be declared at time of wort pick up, brew and bring back at a date later date and the winning brew will be brewed on their system. On beersmith how would you build your recipe and brew it. I'm thinking build it as an extract with specialty grains recipe and as far as brewing it. Steeping my grains in a portion of the wort prior to boiling to extract the flavors. Any thoughts are appreciated.

I'd start by checking the current gravity of the wort they are giving you.

I know that we are targeting 1.055 into the fermenter.
