My American amber has now been fermenting for 7 days in a 1 gallon carboy.

Longer than 7 days... let it go until specific gravity is stable and it tastes right, then cold-crash in your fridge (assuming you have one and can fit a 1 gal jug in it) for about 3 days. Should be pretty clear by then.
