I have a 3lb bag of Plain Extra Light DME that I have had about a year. It has never been opened.
Is this still good? I plan to use it for starters.....

If it's sealed good and still looks good, then go ahead and use it. Should be great. I have used DME that was over two years old in starters and never had a problem.
