I racked my apricot wine over off the fruit into a carbuoy and added some boiled water to fill up headspace...and unfortunately someone had recently boiled it for tea and I added hot water to my wine. Didn't notice since I was busy and frazzled and...well, there were only a few cups worth to a gallon, but enough that I added ice around the top of the carbuoy to try and cool it down as it felt warm on the top..
It's my first test batch of this fruit wine which has otherwise gone rather well. Would this kind of heat for a short period of time wreck it? I'm going to carry it through but I don't want to wait a year for swill...:mad:
