I made a wine from pie filling and sugar and montrachet yeast and it tasted a little hot. I read that 71b would take away some of the heat, so I made another batch using that yeast. Granted, it is just 2 months old, buy it also tastes hot. Will this age out? And if so, about how long...6 months? Year?

I usually bottle around the 6 month mark & then age another 6 months.
what was your og/ is your abv? higher abv wines take a bit longer

1.116 OG, last time I checked FG it was 1.020 but I am told this wine is supposed to go to 1.006. I think that makes it around 14%
 
yeah, that's a pretty strong wine, I bet it is hot at 2 months!
I'd bulk age it awhile & maybe bottle some in 12 oz bottles so you can try some every 2-3 months without risking a full 750ml.
