Hi everyone!

Has anyone had success pairing staple American hops like mosaic or El Dorado with nobles like saaz?

I was thinking about an American red lager with some El Dorado and or Simcoe for bittering and late, and a touch of saaz at flameout or whirlpool. These OK to pair?

I've found the American varieties drown out the more subtle European hops, which I prefer greatly, but there is nothing wrong with it.

I thought that might be the case, was thinking I'd go lighter on the El Dorado and use a good amount of saaz at whirlpool and see what happens. Just wanted to confirm it was a feasible combo. Thanks!
