I am going after the second edition of a IIPA with honey, and a lot of citra, add well as amarillo, warrior and syncope hops. 5 gallon batch, all grain. In the first rendition I used 1lb of wildflower honey @5min. I was going to add another pound of either more wildflower, or orange blossom honey, or a pound of honey malt, thoughts?
 
IMHO Honey malt adds more honey flavor than honey itself. I have been warned it can bee, ha ha no pun intended, rather sweet if used in large quantities. I have never used a lot in a beer, however, I did add some in a pale ale I just made and think I could have added a bit more. It was a small 3.5 gal batch

Think I will add more honey malt next time or add a bit of a light crystal malt to balance out the Citra.
 
If I was going to use honey malt, I'd use 3%, maybe I'll stick with that.
