I tried to over stretch this summer with the amount of batches fermenting at the same time. I usually don't brew lagers in the summer leaving my lager fridge open for my ales, but since its been so cool here in Atlanta this summer my basement was staying steady at about 68°. I had two 5 gallon lagers in fridge, and three ales in cool spot of basement. Upon rotating a lager to keg, and one ale I noticed the ale was at 74 and after carbing it definitely is not what I usually make, not undrinkable but not very good either. My question is can the other two ales be salvaged by longer conditioning at 62-68°, or is the damage caused irreversible?
