the wife bought me a man crate ipa kit a few years ago and well i never got around to it and the hops and yeast expired. so i bought a 1 gallon irish red ale kit. shes in the basement fermenting right now.

oh and im thinking i want to try to make a champagne style cider. super clear and crisp

Once you start fermenting things it is hard to stop. Next thing you know it will be Korean crazy farmer juice (makgeolli) instead of beer.
