I'm still dialing in my HERMS temperature...the delta between the HLT and the mash. I undershot 148, shooting for 150.
The mash temp affects fermentability, dryness, etc....but mashing isn't a snapshot...it's an hour long event. I'm assuming it all averages out?
I know...relax, don't worry, and have a home-brew.

Yep... chill out. 2 degrees is not the end of the world. If its low just ramp it up. I always ramp up to 168°F for mashout in the end. That way is spends a few minutes thru the 150's to finish conversion if it hasn't already.
