I have some ingredients left over from kits I was given and just extras from previous brews. Help me come up with a recipe using what I have. Or should I just use all of the extract & grains I have together, and come up with a hop profile. I'll be near the LHBS tonight, so if I need to pick up something small I can. Thanks.

Fermentables
(2) 3.3 lb - Munich LME
1 lb - Amber DME
1 lb - Carapils
1 lb - Mix (12 oz - Munich 10L & 4 oz - Caramel 10L)
12 oz - Mix (8 oz - Caramel 60L & 4 oz - Caramel 20L)
4 oz. - Crystal 40L
4 oz. - Crystal 20L

Hops
2 oz - Amarillo (Pellet)
1.5 oz - Cascade (Leaf)
1 oz - Summit (Leaf)
1 oz - Willamette (Pellet)

Yeast
2 - Nottingham Dry Yeast (DanStar)
1 - Thames Valley 1275 (Wyeast)
 
Looks like a malty, hoppy american amber is in store.

I would use the 60L mix and the extra 40L for crystal malts.
Use enough of the Munich DME to get to the OG that you want.
Leave out the carapils.

Hop as follows:
0.5 oz - Summit at 60 min (use enough to get 30-40 IBUs)
1 oz of Willamette at 10 min
1.5 oz of Cascade at FO (steep for 30 min)
2 oz Amarillo dry hop

Notty Yeast fermented under 65 degrees.
