Help! Cooling in water bath after boil

I am making a basic wheat extract kit and when cooling I got this gathered cloud of wht I think is malt extract
When pouring into my primary should I bring the cloud for more sugars or try to leave it with the trub?
This has never happened to me before and usually sinks to bottom

Looks like proteins dropping out from cold break. I'd leave them behind if possible. Just my .02. If I'm wrong I'm sure someone will correct me.
