Bottle conditioned at 68F for 2 weeks...tasted it and YACH! tasted like rotten watermelon. And very poor carbonation, only creates like 1/8th of an inch head on the glass when i poured it.

so i gave it another couple weeks(yesterday), tried again, still there. still poor carbonation. doesn't taste sweet...

it tastes like rotten watermelon, then that goes away after a second or two and then it has that distinctive German beer taste.

It doesnt smell foul or bad at all, just the taste...

where did I screw up? Can it be saved?:(

Everything I have read has said to give it time. Put it in the back of your closet and come back to it in a couple of months.

Sent from my SCH-I545 using Home Brew mobile app

I add my extract while off the heat. Never had a problem with carmelization, but I've heard that adding the extract while the heat is on can burn the extract. Not sure what that ends up doing... Did you notice any burning on the bottom of the kettle?

Also, do you boil your priming sugar? Do you use a priming bucket?

Obviously it either just needs time or something happened to the whole batch most likely at priming/bottling..

Yes i boiled my priming sugar. Dumped it on bottom of my bottling bucket, and auto siphoned my beer into my bucket from my carboy. Then i bottled.

Yes i did add bottled water after the boil. Ive added the sane water to all my brews. This is my only batch that didnt taste good at 4 weeks.

Ill just put jt in my closet and forget about it for 3 months.
