I'd like to brew a Helles for summer drinking, but would like advice on the water. I'd like something crisp for sipping at the grill. Recipe aside, here's what I've come up with in Bru'n Water (starting with RO water):
Ca - 51
Mg - 5
Na - 8
SO4 - 51
Cl - 72

Enough acid to adjust mash pH, hardness - 150 and alkalinity - -100
OG - 1.046
IBU - 22

Will this get me what I might want? Water is the last frontier for me - still trying to figure it out.
 
I'm working up a smoked Helles recipe right now as well.

I've come up with distilled water ameliorated to SO4 = 64, Cl = 47, and Ca = 53 (no added Mg or Na). Mash adjusted with acidulated malt to 5.4 pH. Similar IBU/OG as well. Good luck!
 
Wow, I just make my Helles a Dortmunder Export using rock-hard well water. :yes:

I bet your version is fabulous! Keep us posted!
 
It looks right on target to what I shoot for. I always target a pH of 5.3 with 88% lactic acid or 85% phosphoric acid. I usually add some at the end of the boil to bring the pH down a bit more as well.
