Quick question. I want to brew a Muntons Canadian Ale 3.5 lb. can ,but only want to brew it up to 3 gallons. I have a 6.5 gallon fermenter and wondered if that was too much headspace for 3 gallons. TIA, Randolf. Cheers!
 
No, you'll be fine for primary fermentation. All that headspace will just fill with CO2. My most used fermenter for 5 gallon brews holds 8 gallons. Plus you pretty much eliminate the chance of a blow off.

Main reason: a relatively larger amount of oxygen remains in the larger headspace. A 4 gallon bucket would be better suited.

To reduce the headspace, you could fill a sanitized plastic bag with air (or CO2), tie is off airtight, and place that inside the headspace.
