My normal yeast process is (for a strain I don't currently have) to overbuild the starter, store a few small jars (just enough in each to inoculate a future starter) and then pitch the remainder.
I brewed a Pilsner recently with 2x packs of dry yeast. I'd like to harvest some of the yeast after fermentation completes (a few small jars, each containing just enough yeast to inoculate a starter).
I'm wondering if I add gelatine to the fermenter (to clear the beer before bottling/kegging) whether that will affect the performance of any yeast I harvest? Would I be better off transfering to a secondary vessel, adding the gelatine to that then bottling/kegging from the secondary vessel?
