Harvest Wyeast 2565 (Kolsch) by skimming?

Hi all! I just checked the gravity on my Kolsch I'm making, and I found that, even though it's nearing its FG after one week, there is a thick head of yeast at the top that I'm tempted to skim and harvest. Am I asking for trouble by skimming this, given that it's already a very low flocculating yeast and I'm presumably taking the less-flocculent part of it? Or should I just chill out and do it?
 
If you want to try then do it. But be careful with hygiene.

To get as healthy yeast as possible you should do it just after you get the krausen layer on top. So you are a few days late, but I bet it will work.
Skim off the very top layer and throw it away, this is not what you want as it contains proteins and other stuff. Then harvest whats in the middle of the cake.
 
I would skim at ~2 days, discard, and then skim again at 3-4 days. Be prepared for an explosive fermentation.
