Have 6 gallons of raw juice, no chems at all, and it is a constant boil in my air lock. Must smell good. Air lock is attracting dozens of fruit flies. Is this good?

Put vodka or starsan in the airlock, not water. Fruit flies are known to carry acetobacter on their bodies, and if you get any suck-back into the cider you'll end up with vinegar.

Sure, anything with that much alcohol will prevent any nasties from growing.
