My I recommend some reading matterial? How to Brew by John J. Palmer. All of your questions are broken down in simplicity in the first few chapters. Easy read. And some words of advice from my local brew shop, "Keep it simple, Stupid."
 
I opened my first Porter with my dinner tonight! It still needs a couple weeks to be really good but I was impressed with how good it turned out, and I'm sure it will get better.

I have not tried to prime with honey before but I have heard of it....somewhere...

I'll see you there this summer I live in Gillette and I work in Douglas so it'll take me a while but yeah definitely I'll be there.
