Graduation Beer?

Hello everyone. I was the recipient of some tremendous news on Friday. After many months (years actually!) of preparation I was finally accepted into Physician Assistant school. I will start school on January 7th, 2013 with a graduation date of 2015.

I would like to brew a beer that will age really well over two years that I will open upon graduation. I love Belgian beers and was leaning toward a trippel but was also thinking perhaps an imperial IPA or stout.

I would like to make something that most everyone will enjoy as many of my friends are not into craft beer as I am. Any ideas?
 
Congrats on being accepted into this program. Perhaps a Russian Imperial Stout might be appropriate. Be sure to use plenty of yeast for these bigger beers (in case you have not brewed one before.)
