I am making ginger beer, using a wild-yeast ginger bug to naturally carbonate. What I was wondering is that if I put lime into the "wort" that I will pitch some of the bug into, will it be too acidic and hinder/kill the yeasts from my bug? If so, when should I add citrus (its kinda crucial to the flavor)? Or at all? Thanks!
