So i keep my house around 74 degrees during the day. My first three brews had a warming diacetyl taste to them, and i think it's bc of the warm fermentation temp. Maybe because i didnt hydrate my yeast? I use a brewdemon fermenter, so it's kinda hard to do a cold water bath with a wet tshirt. Anywho, i bought a Frigidaire mini fridge to ferment in. Problem is, its too cold on the lowest (warmest) setting. I placed a glass of water in there and 5 hrs later it's at 46 F. Anybody take the top mini freezer out? Or i remember reading somewhere about a device that you can set it to whatever temp you desire. Tips would be appreciated!
 
There are a few options as far as converting a mini-fridge to a fermentation chamber, but I think the most common, as well as easiest method is the STC-1000.
