I have a Duchesse Du Bourgogne Clone with wyeast3763, I went from carboy to keg yesterday. (1 year from brew day.)
Now that it has carbonation, will it still mature?
In other words, I wish I left it in the glass for another 6 months, it's missing something..... Can I leave it at room temp for a few months in the keg, or will further souring be altered by my force carbonating it?
